An Oshibori can be prepared at home in five minutes: moisten a small cotton cloth, wring it out, roll it, and warm it. The only place where you can go wrong is the temperature, and there the mistake is always the same. Too hot.
What you need
- Small cotton terry towels, about 30 by 30 centimeters. Washcloths work, linen kitchen towels do not.
- Water, nothing more. Scent additives are possible, but optional.
- A heat source: microwave, steam oven, or hot water in a pot.
The four-step instructions
- Moisten. Dip the cloth in warm water and wring it out thoroughly. It should be damp, not wet. If it drips, the table gets wet instead of your hands getting clean.
- Roll. Roll tightly from the long side. A rolled cloth retains heat significantly longer than a folded one, because less surface area is exposed to the air.
- Warm. In the microwave for about thirty to fifty seconds at medium power. In a steam oven for a few minutes. Then let it rest briefly so that the heat distributes itself.
- Test. Test the cloth on your own back of the hand before it is handed out. Always.
The right temperature
A comfortable temperature is one that is noticeably warmer than your hand but doesn't make you recoil. The range is approximately what you would consider pleasantly hot when washing your hands.
The microwave heats unevenly and creates hot spots inside the roll. Therefore, after warming, it needs half a minute to rest and then a test on the back of the hand. Skipping this risks a burn, and that to someone else.
How long they stay warm
A rolled cloth on a plate maintains a pleasant temperature for about five to ten minutes, after which it cools down noticeably. In a closed dish or under a cover, it lasts a few minutes longer.
For a meal at home, this is sufficient, as the cloths are prepared just before serving. For commercial use, it is not enough, and this is precisely where improvised solutions in gastronomy fail.
With or without scent
A drop of essential oil in the moistening water is enough; more quickly becomes overpowering. Lemon, green tea, and lavender are the usual directions. If you have guests whose sensitivities you don't know, omit it.

Cold Oshibori in summer
On hot days, the principle is reversed: moisten the cloth, roll it, and place it in the refrigerator for half an hour. Not in the freezer, as a frozen cloth is unpleasant and cannot be unfolded.
